One of the benefits of raising pastured poultry is fresh chicken feet. Ok, stop saying EWWWH, I said it enough for us both! One of our customers was telling me the benefits of broth made from chicken feet. It is full of nutrients and has wonderful benefits for our bodies. The gelatin from the feet creates this beautiful broth, almost a bouillon. There is nothing to compare to homemade chicken broth and bouillon.
I took several pounds of the feet and removed the toenails (pliers help) then boiled them for 5 minutes. I drained this water and looked over the feet to remove any dark pads on the bottoms and added enough cold water to just cover the feet. I added: 1 bay leaf, 1 quartered onion, 2 carrots, 2 celery stalks, 10 peppercorns and a sprig of thyme (1/2 tsp. dried thyme also works). I let this come to a boil then reduced to a simmer. I let it simmer for 3 hours. After it cooled somewhat, I strained it through a colander and into quart jars. You can strain it through cheesecloth for a clearer gelatin.
Seal it and put in the . It will keep for months. This can be used to flavor any food you would normally use chicken bouillon in.

I just made chicken broth using the feet – it was amazing! I told my husband it would raise the dead, and I truly believe it’s what Jesus fed Lazarus when he “awoke”.
